Chilli con carne
Chile Colorado - the OG Chili con Carne! This is a dish from Northern Mexican made with beef stewed in a rich & smoky red sauce ("Chile Colorado" means "red-coloured chilies").
It's a bold and complex dish, but it's super easy to make with Chili Maven. Serve with rice on the side and you have the perfect mid-week meal. It's absolutely delicious and trust me, you'll want to keep this recipe on repeat. To make it vegetarian, use mushrooms instead of beef.
Ingredients
500g braising steak
3 tablespoons of Chili Maven’s MILD & SMOKY salsa macha
1 tablespoon of vegetable oil
250ml beef/chicken/vegetable broth
1 teaspoon dried oregano
2 bay leaves
1 tablespoon flour
Salt to taste

Season the steak with salt, and brown in a large, heavy pot over medium-high heat with the vegetable oil to keep it from sticking.
Dollop the salsa macha into the pot and stir to coat the beef. Let it sizzle for 1 minute to allow the aromas of the chillies to shine.
Add the broth, oregano and bay leaves and simmer for 5 minutes.
Sprinkle in the flour (through a sieve to keep it from clumping), mix well and simmer for a further 10 minutes.
Serve with rice and tortillas.
Can be made ahead, the flavours will intensify if you do.
